This is my go-to lunch when I haven’t made anything else more interesting. This ensures that I’ve eaten my veggie, fruit and water quota for the day even if I do nothing else at all. :).
Turkey and Cheddar Cold Cut Salad
3 cups shredded Romaine lettuce
1/2 each of Honey Crisp and Granny Smith apple cut into 1 inch pieces
2 slices turkey breast
1 slice sharp cheddar cheese
Italian dressing to taste
Salt and pepper to taste
Place lettuce on a plate. Place the slice of cheddar cheese on top of the turkey, roll it up and slice into I inch pieces and place on top of the lettuce. Add the apples. Pour dressing on top and salt and pepper to taste.
